RECIPE OF THE MONTH

Skin-Glow Mango & Avocado Salad

Antioxidant-rich, anti-inflammatory, and absolutely delicious — this is skin + food at its finest.

What you eat is every bit as important as what you put on your skin. This vibrant salad is loaded with ingredients that fight inflammation, support collagen production, and deliver the antioxidants your skin needs to fend off free radical damage from UV exposure. It's the perfect May meal — light, refreshing, and packed with purpose.

INGREDIENTS

2 ripe mangoes, diced Vitamin C

2 ripe avocados, sliced Healthy fats

1 cup cherry tomatoes, halved Lycopene

½ red onion, thinly sliced

½ cup fresh cilantro, roughly chopped

¼ cup pumpkin seeds Zinc

3 tbsp fresh lime juice

2 tbsp extra virgin olive oil Antioxidants

1 tsp raw honey

½ tsp chili flakes (optional)

pinch flaky sea salt & black pepper

HOW TO MAKE IT

1 Whisk the dressing. In a small bowl, combine lime juice, olive oil, and honey. Season with a pinch of salt and whisk until emulsified. Set aside.

2 Prep your produce. Dice the mangoes, slice the avocados, halve the cherry tomatoes, and thinly slice the red onion. Keep the avocado slices a generous size — they hold up better in the salad.

3 Assemble. Layer the mango, avocado, and tomatoes on a large platter or in a wide bowl. Scatter the red onion and cilantro over the top.

4 Dress & finish. Drizzle the dressing evenly over the salad. Top with pumpkin seeds, chili flakes if using, and a final pinch of flaky sea salt.

5 Serve immediately for the brightest colors and freshest flavor. Pairs beautifully with grilled salmon, Shrimp, Chicken or as a standalone lunch. Add a dash of balsamic glaze as an extra kick!

Tip: The lycopene in tomatoes is a powerful antioxidant shown to help protect against UV-induced skin damage. Avocado's healthy fats help your body absorb fat-soluble nutrients like beta-carotene in the mango. This isn't just a salad — it's Total Skin Health!
