Barrier-Repair Salmon & Blueberry Grain Bowl

INGREDIENTS

  • 2 salmon fillets (wild-caught, if available)Omega-3s rebuild the skin barrier & calm inflammation

  • 1 cup cooked quinoa Complete protein supports collagen synthesis

  • 2 cups baby spinach Vitamin A & iron support cell turnover

  • 1 cup fresh blueberries Antioxidants protect against UV-driven free radical damage

  • ½ avocado, sliced Healthy fats improve barrier lipid balance

  • ¼ cup walnuts, chopped Omega-3s & vitamin E support barrier repair

  • 3 tbsp olive oil Polyphenols support skin elasticity

DIRECTIONS

  1. Season the salmon with salt and pepper. Sear in a hot, lightly oiled pan for 4–5 minutes per side, until it flakes easily.

  2. While the salmon cooks, whisk together olive oil, minced shallot, lemon juice, and honey for a simple dressing.

  3. Divide the quinoa and spinach between two bowls as your base.

  4. Top each bowl with flaked salmon, blueberries, avocado, and walnuts.

  5. Drizzle with the lemon dressing and finish with a pinch of flaky salt.

  6. Serve immediately, or pack for a make-ahead lunch — it holds well for up to a day.

Bernadette's note: I make extra to bring for lunches throughout the week. The combination of omega-3s and antioxidants is exactly what I recommend to clients who are also getting CoolPeel or microneedling this month — good nutrition inside makes the results outside last longer.

Swap it: Feel free to replace the spinach with any leafy green you have on hand — kale, arugula, and baby greens all work well. I also cook my Quinoa in bone broth for added flavor and protein.
